This Mediterranean Bean Salad can be used as a side dish, main dish, or snack. Feel free to add Mediterranean Diet compliant ingredients such as fresh spinach or chunk tuna as desired. Makes eight servings.

DRESSING

  • 1/3 c extra virgin olive oil
  • 3 Tbsp lemon juice
  • 3 Tbsp red wine vinegar
  • 2 tsp dijon mustard
  • 1 tsp minced garlic
  • 1/2 tsp kosher salt
  • black pepper to taste

SALAD

  • one can white beans, drained and rinsed
  • one can kidney beans, drained and r insed
  • one can garbanzo beans, drained and rinsed
  • one medium cucumber, chopped
  • 2 cups cherry tomatoes, sliced
  • one diced sweet pepper -- green, red or yellow
  • 1/2 c chopped fresh parsley
  • 1/2 cup chopped red onion
  • 2 Tbsp chopped fresh basil
  • 3/4 c feta cheese -- use brine-packaged block feta and crumble your own to avoid the additives in pre-crumbled feta

INSTRUCTIONS

Combine all salad ingredients by gently tossing in a large salad bowl.

Whisk together the dressing ingredients and gently pour onto the salad. Mix gently until all ingredients are coated.
